Cabbage Rolls

Ingredient list

1 (2-pound) head cabbage 1 ½ cups chopped onion 1 tsp. extra-virgin olive oil ½ pound lean ground pork 1 pound extra-lean ground beef ½ cup uncooked rice 1 large egg 3 tsp. chili seasoning mix 1 tsp. salt ½ tsp. pepper ½ tsp. paprika 2 (10-oz) cans condensed tomato soup, divided


- Three days in advance, cut the core out of the head of cabbage, remove outside leaves and set cabbage in freezer plastic bag. - On the third morning (the day before serving), remove cabbage from freezer and leave in a safe place to thaw. If not enough has thawed when you’re ready to make the rolls, run cabbage under warm water to thaw the necessary extra leaves. - Spray a 13x9-inch glass baking dish with nonstick cooking spray. - Sauté onion with oil in a nonstick pan over medium-high heat until onions are softened and translucent, about 3 to 5 minutes. In a large bowl, mix together ground meats, onion, rice, egg, chili seasoning, salt, pepper, paprika, and ½ cup tomato soup until well combined. Set aside. - Spread remainder of the first can of tomato soup in bottom of prepared baking dish. Take leaves off thawed cabbage. Cut along both sides of the stem of each leaf; discard stem. Lay the leaves flat. Place 1/3 cup filling mixture on the widest part of each cabbage leaf. Fold the leaf over the filling, fold one side in, leaving the other side open, and continue loosely rolling up to the tip of the leaf. Arrange each finished roll in the baking dish, seam side down. Cover finished rolls with remaining can of tomato soup. - Cover and refrigerate overnight. Return remaining frozen cabbage to freezer for future use. - The next day, preheat oven to 350 degrees. Bake, covered 2 hours, then uncover and bake an additional ½ hour. To serve, spoon pan sauce over rolls. Serves 6 to 7.
