Spiced Meatballs in Fragrant Tomato Sauce

Ingredient list

For the meatballs: ½ lb. ground pork ½ lb. ground turkey or chicken ¼ cups grated onion 1 egg 2 Tbs. cornstarch ½ tsp. each kosher salt, black pepper, ground cumin, and ground coriander ¼ tsp. ground allspice ¼ tsp. red pepper flakes 1 Tbs. olive oil For the sauce: 1 cup diced onion ½ cup thinly sliced carrot 1 Tbs. tomato paste 2 tsp. smoked paprika 1 tsp. dried thyme leaves 1 tsp. ground cumin 1 tsp. ground ginger ½ tsp. ground cinnamon 1 can diced tomatoes in juice (14.5 oz.) 1 cup diced eggplant ½ cup low-sodium chicken broth 1 cup diced zucchini 2-3 Tbs. orange juice (½ an orange) Salt to taste For the germolata: 1/3 cup chopped fresh cilantro 1 garlic clove 1 tsp. minced orange zest Orange slices


- Combine pork, turkey, ¼ cup onion, egg, cornstarch, salt, pepper, ½ tsp. cumin, coriander, allspice, and pepper flakes in a bowl. Shape mixture into about 24 balls. - Sauté meatballs in oil in a skillet over medium heat until browned on all sides, about 8 minutes. Remove meatballs from skillet. - Add 1 cup onion and carrot for sauce to pan used to brown meatballs; sauté until onion is soft, about 5 minutes. Stir in tomato paste, paprika, thyme, 1 tsp. cumin, ginger, and cinnamon; sauté for 1 minute. Add tomatoes with their juice, eggplant, and broth. Return meatballs to skillet; stir to coat with sauce. Cover pan and simmer over low heat for 10 minutes. - Add zucchini; cover, and simmer until zucchini is cooked through, about 10 minutes. Stir in orange juice and salt. - Combine cilantro, garlic, and zest for gremolata in a bowl. To serve, spoon meatballs and sauce over Lemon Pastina (look in other sides); sprinkle with gremolata. - Garnish with orange slices.
