Roasted Red Pepper Sauce

Ingredient list

1 cup roasted red peppers (from water-packer jar) 1 cup vegetable or chicken broth 1 Tbs. balsamic vinegar 1 Tbs. olive oil ¼ cup chopped basil Salt and pepper

Preparation

- In a blender, combine red peppers, broth, vinegar, oil and basil and process until smooth. Transfer to a small saucepan and set over medium heat. Bring to a simmer, partially cover, and simmer for 10 minutes. Remove from heat. Season to taste with salt and pepper.
